To cut through that opulent dairy fat, the morsel is crowned with a microscopic brunoise of lacto-fermented damson plum and a whisper of aerated lemon-verbena foam. The deeply savoury, nutty warmth hits the palate first, immediately followed by the shocking, fermented brightness of the plum. It is opulent, balanced, and remarkably clean.

Crispy Duck Confit Rillettes with Fig-Harissa Glaze
Slow-cooked duck leg confit offers quintessential autumn indulgence, but it requires a lively counterpoint to keep it from feeling overwhelming on the palate. Shredded confit duck is pressed into bite-sized brioche batons and toasted until golden. It is then finished with a glossy reduction of Mission figs, wildflower honey, and Moroccan rose harissa. Sweet heat in autumn must feel culinary, not collegiate. The fig provides a jammy body, the honey offers viscosity, and the harissa delivers a slow, smouldering cumin-chili warmth that blooms in the back of the throat long after the crunch of brioche dissipates.

Torched Pork Belly with Black Garlic Toffee & Crushed Pecan Brittle
Pork belly skewers can easily skew toward standard backyard barbecue fare. We elevate them to haute cuisine using savoury confectionery techniques. Braised pork belly cubes are torched until the skin crackles, then glazed with an umami-dense toffee made from fermented black garlic, tamari, and smoked sea salt. The skewer is then rolled in finely crushed, toasted pecan brittle. The dark sweetness of black garlic mimics balsamic vinegar and dates, creating a sticky, lacquered bite that hits every pleasure receptor simultaneously: salty, sweet, smoky, fatty, and deeply crunchy.

Beside them, a massive half-wheel of artisanal raw-milk raclette—perhaps sourced from the brilliant fromagers at La Trappe à Fromage or Jacobsons Cheeses—is heated under a dedicated broiler until bubbling, golden, and blistered. The chef scrapes the molten cheese directly over the sizzling vegetables, finishing each plate with a drizzle of chili-infused hot honey, toasted pepitas, and pickled mustard seeds. 

The pungent, earthy cheese melts into the naturally caramelized sugars of the squash, while the pickled mustard seeds pop like culinary caviar, slicing right through the richness.

The Artisanal Emulsification & Crudo Station

For couples seeking an ultra-fresh, gallery-style aesthetic, this station provides an exquisite visual contrast to the deeper, woodsy elements of autumn. Set over chiseled blocks of crystal ice, chefs serve delicate scallop tartare and Hamachi crudo. But the interactive element lies in the finish: a live tasting of single-origin extra virgin olive oils—sourced from incredible local purveyors like The Unrefined Olive—emulsified tableside with apple cider shrubs and fermented green strawberries.
